Aged in American new oak (Quercus Alba), it’s no surprise that, in a very spirited finish, this Chichibu has taken on the flavours unique to American whiskey. This serves to further highlight the quality of a maturation that leaves nothing to chance. Better still, the mineral and pure character of this single malt distilled by Ichiro Akuto has lost none of its intensity. Balsamic (heather, cedar, Oregan pine), empyreumatic (varnish) and medicinal notes (tiger balm) flesh out a palette of flavours and aromas that finds its originality in a proudly assumed classicism.

Profile: lively and rich, the first nose reveals sumptuous varnish aromas. Allowed to breathe, it develops notes of precious wood. The exotic (mango) nose becomes increasingly rich (apricot tart), spicy (pink peppercorn) and medicinal (tiger balm). The slender attack is extremely fruity (orange, Mirabelle plum). On the mid-palate, heady florals (heather, lavender) bring whole pots of honey in their wake. The mineral end of the palate is rocky and floral (broom). With confidence, the start of the finish flirts with the world of sweets (maize notes). It then becomes spicy (cardamom, ginger) and rich (chocolate cake). On the retro-nasal olfaction, red fruits (raspberry) and blood orange create a beautiful palette of bright colours.

Tasting note

  • Appearance : topaz
  • Nose : both lively and rich. On the first nose, absolutely sublime varnish flavours take up the entire aromatic palette. Allowed to breathe, the nose develops wonderfully elegant oak notes. Particularly exotic (mango, guava), it also brings to mind a slightly burnt apricot tart. Gradually, spices (clove, pink peppercorn) bring lots of heat. Its medicinal character then develops (tiger balm, mustard poultice) as salted butter caramel covers the taste buds.
  • Palate : distinguished, slender. The extremely fruity attack (orange, Mirabelle plum, pear, pippin apple) reveals a very delicate mouthfeel. On the mid-palate, heady florals (violet, lavender, heather) bring in their wake whole pots of delicious honeys. The mineral (schist) end of the palate invites us to explore rocky trekking paths covered in broom.
  • Overall : long, confident. Flirting with the world of sweets (maize notes), the start of the finish is a compendium of spices ground into powder, each more noble than the next (ginger, cinnamon, cardamom). Increasingly rich, it wavers between succulent chocolate cake, marmalade and apricot jam. On the retro-nasal olfaction, red fruits (retro-nasal olfaction, strawberry) and blood orange create a beautiful palette of bright colours. The empty glass is balsamic (cedar, Oregan pine, walnut) and tertiary (pine resin, chestnut, hazelnut).

The brand

Created in 2008, Chichibu Japanese single malt whisky is already well-known to Japanese whisky enthusiasts, and to whisky connoisseurs generally. Entirely produced at the distillery and soon, for some expressions, with local barley and peat, and even Japanese oak casks, Chichibu is on its way to becoming the first 100% Japanese whisky, thanks to the efforts of its creator, Ichiro Akuto. Fermented in vats made of mizunara (a variety of Japanese oak that is very highly regarded for whisky) and distilled in small stills, the resulting liquid presents a surprising maturity and complexity, even when it is very young. A beautifully crafted whisky.


The distillery

Founded in 2007 by Ichiro Akuto, the grandson of the founder of the Hanyu distillery, Chichibu has been active since February 2008. Consisting of two stills made to order in Scotland by Forsyth’s, this distillery has a very exclusive following, it is not only the first Japanese single malt distillery since Hakushu, but also the smallest. In 2008 Ichiro started selling a range of very young whiskies called ‘Newborn’, before launching his first ‘real’ whisky, a three-year-old at cask strength, at Whisky Live Paris 2011. The distillery also houses the last stocks of Karuizawa, Kawasaki and Hanyu, and has its own bottling facility.
