Sélectionné en Mars 2015 à la distillerie, ce single cask est un véritable concentré de Chichibu. Du fruité au boisé en passant par des notes florales et épicées, tout y est, et en abondance. En cause, ce vieillissement en quarter cask « Chibidaru », qui a pour effet d’accentuer et d’accélérer les échanges entre le fût et l’alcool au cours de la période de vieillissement. Le résultat, un whisky qui au bout de quelques années seulement est en pleine possession de ses moyens !

Tasting note
- Nose : plein, riche. Sa minéralité est sans concession (schiste, ardoise). Son parfum, celui des fleurs des champs (trèfle, lotus), évolue sur les fruits frais (poire Williams, mirabelle) et sur des notes salines. Au fur et à mesure, il nous fait découvrir d’autres contrées olfactives faites de miels et d’épices nobles (safran, cardamome).
- Palate : ferme et en même temps toute en retenu. Son toucher possède un grain d’une très grande finesse. Des épices (poivre, baies roses) roulent sur le palais. La jeunesse du distillat n’a que faire des à priori. Ce single malt est noble, frais et complexe.
- Overall : interminable, elle est marquée par des notes d’orge maltée, de fruits mûrs (pomme, reine-claude), exotiques (ananas), d’agrumes (citron), de fleurs blanches, de plantes aromatiques (sarriette), d’olives et de salicornes. Le soyeux de ses tannins est du plaisir à l’état pur. La rétro olfaction est intensément maltée et le verre vide révèle un nouvel agrume, la clémentine.

The brand
Created in 2008, Chichibu Japanese single malt whisky is already well-known to Japanese whisky enthusiasts, and to whisky connoisseurs generally. Entirely produced at the distillery and soon, for some expressions, with local barley and peat, and even Japanese oak casks, Chichibu is on its way to becoming the first 100% Japanese whisky, thanks to the efforts of its creator, Ichiro Akuto. Fermented in vats made of mizunara (a variety of Japanese oak that is very highly regarded for whisky) and distilled in small stills, the resulting liquid presents a surprising maturity and complexity, even when it is very young. A beautifully crafted whisky.

The distillery
Founded in 2007 by Ichiro Akuto, the grandson of the founder of the Hanyu distillery, Chichibu has been active since February 2008. Consisting of two stills made to order in Scotland by Forsyth’s, this distillery has a very exclusive following, it is not only the first Japanese single malt distillery since Hakushu, but also the smallest. In 2008 Ichiro started selling a range of very young whiskies called ‘Newborn’, before launching his first ‘real’ whisky, a three-year-old at cask strength, at Whisky Live Paris 2011. The distillery also houses the last stocks of Karuizawa, Kawasaki and Hanyu, and has its own bottling facility.
