To make this grappa, Gianni Capovilla travelled to the Bernard Haas estate in Kaysersberg to sniff out a Riesling marc he then distilled near Bassano in bain marie-heated stills. In order to create a grappa packed full of well-balanced freshness and elegance, he extracted from the skin, stems and stalks of this iconic Alsatian grape the pure essence of the variety’s fruity, exotic, spicy and floral character.
Colourless. Extremely refined, the nose initially wavers between notes of white florals and plump, juicy ripe grapes. Brimming with life and energy, the palate is incredibly luminous. It recreates the impression of biting into perfectly mature grapes full of exotic flavours (pineapple, mango), precious spices (cardamom) and milky notes (almond, sugar-coated almonds). With perfect propriety, the retro-nasal olfaction unleashes fragrances of orange blossom and grape stalks. The empty glass is slightly aniseed-inspired and praline-scented.
