Bursting with youth, this Caol Ila selected by Fred Laing and his team cannot keep still. Constantly moving between the wash backs, the still room, and the warehouse where it was aged, it knows that its five years are a considerable advantage in the furious race on which it embarks to bring us a hint of dried peat here, notes of camphor there, some exotic fruit further on, and notes of leather even further. Never running out of breath, it is always charging off on the attack, much to the taster’s delight.

Profile: the nose is characterized by smoky malted barley, that stands at the centre of the aromatic palette. This is accompanied by spicy, herbaceous, peppery and camphoric notes. Peaty and smoky, but also with a hint of fruit (pineapple), the palate has a wild beauty.

Tasting note

  • Appearance : greenish gold.
  • Nose : simultaneously firm and creamy. The initial nose is dominated by smoked malted barley. Then the peat arrives, at first rather dry and herbaceous, then becoming peppery and camphorated. Notes of vanilla and citrus fruit (lemon) gradually emerge, balancing the aromatic palette’s development.
  • Palate : clean, lively. The fruity attack is full of energy, offering exotic fruit (pineapple) and pears. However, the taste buds are very quickly enveloped in peat and smoke. Assertive, the mid-palate is extremely mineral. The distillate’s youth is resplendent in its wild beauty. The flavours gradually become more saline.
  • Overall : long, firm. Evoking germinating barley, it perfectly captures the damp atmosphere of the malting floor. Notes of aniseed refresh the palate, while silky peat precedes the liquoricey and chocolatey retro-nasal olfaction. The empty glass is mineral (chalk), smoky and animal (leather).

As well as reflecting its smoky, malted barley, Caol Ila is also oily and peaty, with marine and vegetable notes. Its recent official bottlings, which are particularly expressive, have an intense smoky and peaty character with a good balance of saltiness and sweetness. Superb versions of this single malt have also been released by independent bottlers Gordon MacPhail & Signatory Vintage. Caol Ila’s stills, which are large and onion-shaped, have a strong influence on this single malt and give it a fairly light and delicate character. Find out more


Established in Glasgow in 1948 by Fred Douglas Laing, the Douglas Lang company has, in recent years, made numerous changes to its structure. Fred Laing’s movement to the head of the company has contributed towards the business’s sound reputation.
