Glittering with resplendent maturity, this venerable, golden Caol Ila offers peaty, smoky shades that recall a glorious epoch without descending into nostalgia for times past. Visceral and poetic, this version embarks, serene, on a journey of aromas and flavours that offers moments of pure meditative joy and exquisite transitions.
Profile: elegant nose, with oily peat, herbaceous and chocolatey aromas. Salt and citrus fruit develop as it breathes. Floral (lily) and medicinal notes (tiger balm). The palate is vegetal (cut hay), rich (caramelized apple tart), fruity (blackberry), floral and peaty.

- Appearance : burnished gold.
- Nose : elegant, unctuous. Oily, herbaceous and chocolatey peat dominates the initial aromatic palette. Allowed to breathe, it becomes increasingly saline and fruity (William pear, orange). Resplendent in its maturity, this Caol Ila is a model of balance and smoothness. Complex, it continues with notes that are medicinal (tiger balm), floral (lily, iris), toasted (walnut) and exotic (pineapple, mango).
- Palate : lively, very dynamic. The attack is delicately herbaceous (cut hay, grass) and ashy. Particularly voluptuous, the mid-palate oscillates between chocolate cake, lemon tart and a caramelized apple tarte Tatin. Gradually, the flavour palate is generously covered with fresh-tasting vervain and heather honey.
- Overall : long, silky. At first, liquorice mingles with heady florals. Then candied citrus and black fruit introduce an extremely fruity dimension. Later, some liquoricey peat re-emerges. The retro-nasal olfaction evokes the sublime fragrance of a lit Havana cigar. The empty glass is marine (smoked fish), with notes of seaweed and camphor.
- The brand
As well as reflecting its smoky, malted barley, Caol Ila is also oily and peaty, with marine and vegetable notes. Its recent official bottlings, which are particularly expressive, have an intense smoky and peaty character with a good balance of saltiness and sweetness. Superb versions of this single malt have also been released by independent bottlers Gordon MacPhail & Signatory Vintage. This independent bottler is without a doubt one of the most highly acclaimed in Scotland. It stands out, not for its age (though it is the oldest independent bottler in Scotland), but for its complete mastery of cask ageing. Gordon & MacPhail is the only bottler to have its own casks - carefully chosen for the purpose - filled by the distilleries themselves, instead of simply buying the ones suggested to them by the latter. This allows it to determine, in advance and with great precision, exactly how many years a whisky will need to reach ideal maturation.
