Deservedly ambitious, this Caol Ila has one goal: to reach the highest olfactory and gustatory peaks. To get there, it adopts an energetic rhythm with multiple scene changes. With every second that passes, new fragrances and flavours arrive. Of the principle ingredients behind its success we find a super-sensitive minerality, peat which relentlessly gains in power, enveloping floral aromas and a refreshing sea breeze.
Single Cask #714 – Hogshead Limited edition of 385 bottles LMDW world exclusive Profile: a combination of lemon, ash, salt and smoke. A handful of white flowers (lilac, lily of the valley) rise from a black, oily soil. Lovely liquorice, malted bitterness.

- Nose : delicate, precise. More smoky than really peaty, and equipped with a chalky minerality, the initial nose signs the Caol Ila name on its olfactory picture. Develops into a more medicinal register (balm, papier d’Arménie), striding across a land burgeoning with minerals and seaweed. It continues to gain in depth as time goes on, becoming increasingly sublime.
- Palate : ethereal, stately. A combination of lemon, ash, salt and smoke, the attack knocks the tasting up a notch. The mid-palate takes off, inviting us to breathe in an invigorating sea air. A handful of white flowers (lilac, lily of the valley) rise surreptitiously from a black, oily soil. A beautiful malty and liquorice bitterness feeds the end of the palate and takes us jubilantly to the finish.
- Overall : long, dynamic. It is now that we need to take a deep breath of the glass to see just how much the aromatic palette has evolved. It has thickened, with the fruits becoming candied and the peat taking the upper hand over the smoke. The finish confirms this transformation. The retro-nasal olfaction is liquoricey, earthy, spicy, salty and empyreumatic (cedar). The empty glass has impressive concentration and peaty/smoky richness.
- The brand
As well as reflecting its smoky, malted barley, Caol Ila is also oily and peaty, with marine and vegetable notes. Its recent official bottlings, which are particularly expressive, have an intense smoky and peaty character with a good balance of saltiness and sweetness. Superb versions of this single malt have also been released by independent bottlers Gordon MacPhail & Signatory Vintage.
