Offering an uninterrupted view of the famous ‘Paps’ of Jura, Caol Ila’s impressive glazed still room is home to the tallest stills on Islay. More smoky than peaty, mineral, undeniably marine and at the same time beautifully fruity, the single malt produced here is extremely popular amongst enthusiasts. A true journey through time taking us back more than half a century, this bottling in many ways evokes the magnificent Caol Ila 1966 Centenary Reserve bottled in 1995 to mark the 100 year anniversary of the renowned independent bottler Gordon & MacPhail. Amongst its many praiseworthy qualities, it is a stunning illustration of how well Caol Ila takes to sherry-cask ageing.

the first nose is refined, characterized by notes of soot and smoked meat, and also fruity (melon). Allowed to breathe, it becomes floral (rose) and chocolatey. The distinguished attack is spicy (ginger), herbaceous (gentian) and medicinal. The powdery finish is intensely smoky, floral (carnation) and liquoricey. On the retro-nasal olfaction, emery cloth notes highlight the noble character of the wood and spices (clove).

Tasting note

  • Appearance : mahogany with glints of green.
  • Nose : refined, unctuous. Right from the initial nose, the scene is set, with notes of soot and smoked meat appearing alongside stewed fruits (marmalade, melon). The aromatic palette then becomes increasingly gamy and salty. Allowed to breathe, a handful of spices (black pepper, curry), quince jelly and heady florals (lavender, rose, peony) bring lots of complexity. Gradually, dark chocolate, liquorice and smoke (ash, burnt wood) lastingly flood the atmosphere.
  • Palate : full-bodied, distinguished. The remarkably taut attack then takes on the fruit and smoke from the nose. The spicy (ginger) and herbaceous (gentian) mid-palate allows superb medicinal and gamy notes to be expressed. This take almost complete possession of the palate. The silky, delicate end of the palate invites us to enjoy a delicious apricot jam sprinkled with rose petals.
  • Overall : long, powdery. Smoke has now filled the flavour palette. The same smoke also hints at a large number of flowers (carnation, purple lilac, gillyflower). With time, notes of Havana cigar, leather and liquorice stick accompany morsels of intense dark chocolate. The retro-nasal olfaction is characterized by emery cloth, noble wood, chimney smoke (soot) and clove. Unexpectedly but with much conviction, the empty glass allows a glimpse of red fruits (red currant, grenadine) and invites us to begin the tasting again.

As well as reflecting its smoky, malted barley, Caol Ila is also oily and peaty, with marine and vegetable notes. Its recent official bottlings, which are particularly expressive, have an intense smoky and peaty character with a good balance of saltiness and sweetness. Superb versions of this single malt have also been released by independent bottlers Gordon MacPhail & Signatory Vintage. Caol Ila’s stills, which are large and onion-shaped, have a strong influence on this single malt and give it a fairly light and delicate character. Find out more



This independent bottler is without a doubt one of the most highly acclaimed in Scotland. It stands out, not for its age (though it is the oldest independent bottler in Scotland), but for its complete mastery of cask ageing. Gordon & MacPhail is the only bottler to have its own casks - carefully chosen for the purpose - filled by the distilleries themselves, instead of simply buying the ones suggested to them by the latter. This allows it to determine, in advance and with great precision, exactly how many years a whisky will need to reach ideal maturation.

The line

The partnership between La Maison du Whisky and this malt specialist goes back to the early seventies. Initially La Maison du Whisky sold Gordon & MacPhail’s great classics. In the 1990s LDMW established its own cellars and launched a new collection called simply ‘Single Cask’. Every single malt in this range undergoes a rigorous selection process from a large number of samples. As its name suggests, Single Cask consists exclusively of single malts from a single cask that has been bottled without chill filtering. It is thus a separate range in its own right, and is presented in a special bottle selected by La Maison du Whisky with a label adapted from an existing Gordon & MacPhail model.
