Straight Tennessee

It is similar to straight bourbon. While all Tennessee whiskeys nowadays are made from 51% corn, this is not compulsory. They differ from straight bourbons in that, before ageing, they are filtered through a layer of more than three metres of wood charcoal.

This process, known as ‘charcoal mellowing’ or the ‘Lincoln County Process’, was invented in 1825 by Alfred Eaton This style of whiskey was officially recognized in 1941.
