Sherry
Sherry, or Jerez in Spanish, refers to specific wines produced in the region around Jerez de la Frontera in the Andalusia region; they were granted a special protected designation of origin in 1977. However, more generally, wines produced in the Montilla-Morilles and Manzanilla de Sanlucar de Barrameda areas are also referred to as sherry. A distinction is made between sherries that, during ageing, are protected by a film of yeast throughout the process (Manzanilla and Fino), those that lose this film prematurely and became slightly oxidized (Amontillado), and those that age without a film and become completely oxidized (Oloroso).
