Eaux-de-vie

The term eau de vie in its broadest sense refers to all distilled spirits. However, in its stricter sense, in the French system, it designates all the spirits that do not have a separate appellation, such as Cognac or Armagnac, that are wine-based eaux de vie. With direct equivalents in most other European languages (‘aquavitae’ in Latin, ‘akuavit’ in Danish, ‘usquebeath’ in Gaelic), it is a term that recalls the medicinal origins of most of the distilled European spirits.
