Apéritifs
Aperitifs are alcoholic drinks that consist of wine or mistelle (lightly fermented grape must), mixed with an infusion of bitter ingredients such as herbs, bark, and fruit. They are lower in alcohol than bitters, but share many common characteristics, they are also somewhat similar to vermouths. As their name suggests, they should be served as aperitifs, either neat, or with ice, or mixed in a little water. They are also becoming increasingly popular as a cocktail ingredient.
