BRASSERIE DE L'ÊTRE Coquatrice BIO Unitaire

The Coquatrice, a legendary hybrid animal with the head of a rooster, the wings of a bat and the body of a snake, gave its name to this beer born of the collaboration between Brasserie de l'Être and the polyfermenters at Archipel. Acidic and lactic thanks to its wheat base and the addition of lactobacillus to the brew, Coquatrice is true to the Berliner Weisse style. It is a light, cloudy white beer that is both light and sparkling. The nose, then the palate, develops flavours of white bread, yoghurt and subtle notes of citrus, lingering on a long finish marked by lemon and wheat. This low-alcohol style is ideal for aperitifs as well as savoury (seafood) and sweet (fruit desserts) food pairings.
