Véritable pépite, la toute jeune craft distillery indépendante Bimber a en très peu de temps réussi à se faire un nom parmi les amateurs de whisky. Nichée dans les faubourgs londoniens, Bimber cisèle chaque étape du processus de fabrication de ses single malts : orge locale, maltage traditionnel, fermentation spontanée dans des cuves en bois construites par son fondateur Dairusz Plazewski, alambics allumés manuellement au feu de bois, sélection uniquement des meilleurs fûts de chêne, embouteillage manuel...
Cette petite série a été réalisée avec un assemblage d'ex fûts de bourbon sélectionnés à la main, issus de chêne blanc américain ou de la variété Quercus Alba. Ces fûts s'allient à merveille avec le distillat fruité typique de Bimber, donnant ainsi un très bel équilibre entre notes d'épices, de vanille et de caramel.
L'assemblage a aussi été fait de façon manuelle dans un cuve en chêne, construite sur-mesure artisanalement pour la distillerie
