The ease with which this bottling passes from extremely maritime aromas to undeniably earthy flavours is an absolute miracle of nature. The citrus fruit, fruit and spices it gradually reveals are a veritable oasis that beckon us to refreshment. So it is with great pleasure that we set sail to discover this Big Peat, created to mark the 60th anniversary of La Maison du Whisky.
Profile: full-bodied, the nose offers a triptych of aromas, simultaneously tarry, herbaceous (straw) and lemony. As it breathes, it becomes more floral and maritime. The peat and smoke gradually dissipate. The palate has an imposing firmness. The peat is oily and earthy, while the finish is marine, smoky and medicinal.

- Appearance : pale yellow.
- Nose : full-bodied, unctuous. The initial nose reveals a delicious triptych of tar, straw and lime. Allowed to breathe, its floral character dominates (jasmine, lilac), the peat becomes more liquoricey and ripe fruits (pear, apple) appear alongside the lime. It gradually becomes much more maritime (smoked fish) and spicy (ginger, clove). Bathed in the backwash of saline, iodine waves, the peat and smoke take off.
- Palate : rich, powerful. The attack on the palate is impressively firm. With authority, an oily, herbaceous peat literally grips the palate. The mid-palate wavers between agave nectar and lemon. Delicately chocolatey, with a mouth-watering bitterness, it delves relentlessly into the ground, twisting itself up in ginger root.
- Overall : long, with a certain mentholated freshness, resolutely facing the sea. Ocean spray gradually fills the palette of flavours. Next, abundant spices (pepper, nutmeg, star anise) lift the peat and smoke high. After slightly contracting the palate, the finish comes to an end with notes of smoking Havana cigar. The empty glass is slightly medicinal (balm, camphor).
- The brand
Using the most famous single malts of the Isle of Islay, including Bowmore, Caol Ila, Ardbeg and Port Ellen, the Douglas Laing company has created an original blended malt (a blend of various single malts). Its label features a picture of Pete the Ileach being hit by a strong gust of wind. Big Pete is both a tribute to the residents of the island and a play on the word “peat”. A celebration of the Isle of Islay - of its inhabitants, its weather and its whisky - Big Peat is un-chillfiltered and comes in three sizes - small, medium and large - enough to satisfy the needs of all its fans, even the most lionhearted!
