The Lajus estate, which is composed of a small sugar refinery and a water mill, was built in 1670 in Le Carbet. It was not until 1920, however, that the new owner, Jacques Bally, began producing rum here using a column still he created himself. In 1924, he became the first person to age his rums in casks. Now produced at the Saint-James distillery, Bally is considered one of Martinique’s most traditional rums and is also AOC certified. A real land of contrasts, this version invites the taster to pick up their pilgrim’s staff and set off on a journey of discovery. Willing pilgrims will encounter a particularly colourful palette of flavours and aromas that never loses sight of its goal to maintain incredible unity from beginning to end.
the robust initial nose is characterized by orange zest. The aromatic palette is split into two hemispheres, one reproducing notes of sugar cane and cane sugar, the other spice (nutmeg) and heady florals (peony). The unctuous attack is earthy (marl). Chestnut and sweet chestnut bring beautiful autumnal shades. Gradually, it becomes more spicy (cinnamon) and chocolatey. The firm finish evokes forest floor (porcini). Milky coffee then spreads across the taste buds providing refreshment. On the retro-nasal olfaction, citrus fruit (grapefruit) works in perfect harmony with the sugar cane.

- Appearance : orangey copper.
- Nose : subtle yet robust. Orange zest acts as a dividing line, splitting the aromatic palette in two. On one side we find sugar cane and cane sugar, and on the other spices (clove, nutmeg) and heady florals (peony, orange blossom). We recommend taking your time and moving slowly to really want to make the most of this Bally which favours discretion over grandiloquence. Allowed to breathe, it becomes increasingly medicinal (ointment, camphor).
- Palate : lively yet creamy. The earthy (clay, marl) attack wavers between dark and bright colours. Chestnut and sweet chestnut then bring an autumnal dimension to a mid-palate that has moved considerably closer to sugar cane. Gradually, chocolate drops and spices (cinnamon, ginger) shower the palate. The end of the palate reveals notes of salted butter caramel.
- Overall : long, firm. The very fibrous (sugar cane) start to the finish evokes forest floor (porcini, moss, lichen) and makes a stunning return to the twilight character of the palate. Milky coffee then spreads across the taste buds, bringing refreshment. On the retro-nasal olfaction, citrus fruits (pink grapefruit, candied lemon) raise blocks of liquorice and cartloads of sugar cane. The empty glass is floral (freesia), fruity (strawberry), chocolatey and roasted (tobacco).
