To really bring out the notes of peat, smoke and malted barley that make up the its essence, this Ballechin has slowly soaked up all the flavours and aromas of Caroni rum during its 9 months finish. This almost perfect osmosis creates a bright single malt with remarkable precision that immediately transports the taster to a whole new universe where pleasure is the golden rule.

Profile: firm, sharp. Peaty, smoky, floral, and honeyed with notes of malted barley, the nose is also spicy. The palate is bright. Rich peat, heady florals and aromatic plants, with notes of coffee and mocha. As a bonus, the finish takes us on a tour of Edradour.

Tasting note

  • Appearance : golden yellow with green hues.
  • Nose : firm, sharp. Peat, smoke and malted barley have chosen the left side of the aromatic palette as their home. On the right, we find heady florals (rose, geranium), wild honey and chamomile, vervain and lime blossom essential oils. Between these two extremes a subtly spicy frontier (cinnamon, pepper) transcends this harmoniously built construction.
  • Palate : full-bodied, rich. Beaming with luminosity and freshness, the attack on the palate takes cunning pleasure in jostling the aromas of the nose. An oily peat with absolutely delicious floral tones, and aromatic plants infuse in a setting saturated with smoke, whilst malted barley bursts with honeyed and roasted flavours (coffee, mocha). Altogether it shows remarkable maturity and fullness.
  • Overall : long, silky. The finish is particularly original, first inviting us to breathe in the scents of malted barley and yeast from fermentation. Next we inhale mature, smoky fragrances escaping from the stills before being taken to visit the clay warehouses of the Edradour distillery. The retro-nasal olfaction is fruity (Mirabelle plum, Greengage plum) and spicy (ginger). A handful of dried fruit (date, walnut) form the grand finale. The empty glass is mentholated, peaty and smoky (soot).

When the distillery was bought in 2002, Andrew Symington called on the services of Iain Henderson, the former director of Laphroaig, for the creation of a second, very peaty malt. Given the name of Ballechin, this second single malt is created using malted barley at 50 ppm phenols, a rate comparable to those of the smokiest malts produced on Islay. Available since 2006, it is sold as a yearly vintage in limited runs of 6,000 bottles. Even more revolutionary than its older sibling, Ballechin is aged entirely in casks that have previously held wine from Burgundy and Madeira.

The distillery

Since 2005, with the opening of the Kilchoman micro-distillery on the isle of Islay, Edradour is probably no longer the smallest distillery in Scotland. Tucked away on the edge of a small valley, among the hills over the town of Pitlochry, this distillery resembles a charming little village with its red shutters, landscaped garden and gently splashing stream. Purchased in 2002 by Andrew Symington, the founder of Signatory Vintage, Edradour has become more than just a tourist attraction. This distillery-farm concentrates all the operations involved in the production of whisky in a single room, from the mill to the still, which is the smallest size authorized by the British Customs and Excise department. Very traditional, Eradour receives 100,000 visitors a year, who are literally transported to the 19th century in this remarkable time capsule.
