A blend of one first fill sherry cask and two second fill sherry casks, this non-chill filtered bottling is extremely well-balanced throughout the tasting. The highlights of its palette of flavours and aromas include perfectly well-integrated wood and a natural ability to continually become richer and fresher. This is accompanied by a deep and full expression beautifully highlighted by floral registers and very well-rounded spices.

Profile: the heady initial nose is delicately woody, malty and spicy (clove). Allowed to breathe, it becomes pastry-like (spice bread) and fruity (stewed apple). The beautifully sculpted attack is vanilla-like and the mid-palate invites us to breathe in fragrances of pine and resin. The noble finish is roasted (tobacco) and exotic (persimmon). Gradually, a delicious fig jam coats the taste buds. The retronasal olfaction is spicy, woody and heady (lavender). Small Batch – Sherry Cask. Limited edition of 2,472 bottles

Tasting note

  • Appearance : mahogany with glints of topaz.
  • Nose : vinous and heady. The very delicately woody (oak, wax) initial nose also reveals very distinguished notes of malted barley, dried fruit (date, walnut) and spices (clove, cinnamon). Allowed to breathe, it becomes creamy and pastry-like (spice bread, Liège coffee, Paris-Brest). With lots of zest and energy, it becomes increasingly fruity (stewed apple, pear), almost exotic (mango).
  • Palate : clean, beautifully sculpted. Very much in the same style as the nose, the palate begins by highlighting a magnificent and very almond and vanilla wood. The fresh mid-palate takes us to the heart of a pine forest to breathe in the aromas of resin and moss. Then, with perfect timing, candied orange and Mirabelle plum launch an attack on the flavour palette. The end of the palate is spicy (cardamom, nutmeg). The sherry brings with it a pleasant saltiness.
  • Overall : long, very noble. The very roasted (pipe tobacco, coffee) start of the finish is also very exotic (persimmon, passion fruit) and powdery (cocoa bean). With time, a delicious fig jam unctuously coats the taste buds. On the retronasal olfaction, star anise, precious wood and heady florals (lavender, lilac) form an inspired triptych that brings elegance to the very end of the palate. The empty glass adds a very fine film of liquorice, dark chocolate and iris.

Situated in the Speyside valley, the golden triangle of Scotland, the Aultmore distillery is renowned for the quality of its single malts. The distillery has had an eventful past. Following its creation in 1896, the distillery’s success enabled its founder Alexander Edward to develop the business by taking over the Oban distillery. The bankruptcy of their main customer Pattison Ltd slowed down production considerably until Prohibition in America and the Great Depression of the twenties put paid to Edward’s ambitions. The distillery was bought several times by a succession of groups, which enabled it to stay open throughout the two world wars. In 1970 the distillery closed for renovation work and was equipped with two additional stills that doubled its production. Owned by the Bacardi group since 1998 the Aultmore distillery is now back in the spotlight thanks to the increasing success of its single malts.
