Nose : voluptuous, precise. On the first nose, Corinthian raisin, praline and aromatic plants (verbena, sage) wonderfully embody the sherry cask’s influence. Allowed to breathe, strong spices (clove, cinnamon) and camphor continually boost the aroma palette ever higher. At its peak we find malted barley, ripe fruit (apple, pear), nuts (walnut, almond) and citrus fruit (mandarin, orange).
Appearance : deep burnished gold.
Palate : well-balanced, fresh. The very original attack is luscious (bay leaf, juniper berry). This unexpected pairing brings lots of length and personality to an admirably malty and chocolate mid-palate. The end of the palate is tertiary (lichen, chestnut), herbal (lime blossom, mint) and rich (cashew nut).
Overall : long, silky. The delicately tannic start of the finish is like the taffeta of a very luxurious fabric, and at the same time like biting into mouthwatering orangettes. Orange dominates the very end of the finish. On the retro-nasal olfaction, candied ginger, coriander and a handful of red fruits (raspberry, wild strawberry) beautifully punctuate the tasting. The empty glass releases the scent of gillyflowers.
