Like a cat toying with a mouse, the Ardmore single malt likes to flirt with its peat. This 1997 vintage is a perfect illustration. In fact, the deeply-impregnated peat doesn’t fully assume its central role until the fi - nish. Until then, it spends its time covering its tracks and playing hide and seek with the taster. So much so that this bottling could almost be said to have created a new concept: that of being influenced by peat without expressing peat.

Single Cask #5556 - Refill Bourbon Barrel Limited edition of 273 bottles LMDW world exclusive Profile: expresses light smoke and fresh fruit (yellow melon, Mirabelle plum). Its fruity notes are very concentrated, almost tannic (fruit skin).

Tasting note

  • Appearance : Deep burnished gold.
  • Nose : Rich, opulent. Tiger balm and nutmeg give the initial nose huge personality. After this somewhat novel beginning, it reveals light smoke and fresh fruit (yellow melon, mirabelle plum). Next, seizing its pilgrim’s staff, it sets off on a journey to explore spicy (cloves, cinnamon, cardamom) and floral (lily, carnations) horizons.
  • Palate : Both lively and full of sweetness. The attack on the palate is broader and more intense than the nose implies. Its fruity notes are very concentrated, almost tannic (fruit skin). On the mid-palate, black pepper and dried fruit coat the mouth. Delicately woody, the end of the palate evolves with notes of honey and mead.
  • Overall : Long, firm. In no way becoming diminished, even adding a new, and noless-important element: peat. Full of roots (gentian, celery). Ardmore seen in its finest light. The retro-nasal olfaction is vanilla-tinged and exotic (coconut). The empty glass is delightfully medicinal (benzoin, camphor) and mineral.

Ardmore is an ambiguous distillery. On the border between Speyside and the eastern Highlands, Ardmore was established in 1897, just one year before the Pattison brothers went bankrupt. Its whisky has a character which could be mistaken for an island whisky rather than a mainland. Interestingly, between 1817 and 1835, another distillery of the same name operated on the Isle of Islay before merging with Lagavulin. This colourful heritage extends deep into its DNA. Discovered thanks to its independent bottlings, Ardmore has, for several years, released its own 12 year old “house”.


This independent bottler is without a doubt one of the most highly acclaimed in Scotland. It stands out, not for its age (though it is the oldest independent bottler in Scotland), but for its complete mastery of cask ageing. Gordon & MacPhail is the only bottler to have its own casks - carefully chosen for the purpose - filled by the distilleries themselves, instead of simply buying the ones suggested to them by the latter. This allows it to determine, in advance and with great precision, exactly how many years a whisky will need to reach ideal maturation.
