The best Amontillados must be aged for at least 8 years. Tio Diego is the result of more than 17 years’ solera ageing.
Deep orange colour; the well-balanced nose evokes ripe fruits, walnut and honey. The palate is powerful, dry and salty and reveals woody notes (cedar). The creamy finish develops into citrus fruit (lemon, tangerine). A classic wine; serve between 10 and 12°C.

Valdespino is one of the oldest bodegas in Jerez, dating back to 1264. It owns Clos de Macharnudo, the finest terroir in the appellation. From the poor, chalky soil, known as alabriza, it produces its Fino, Inocente, and its best Amontillados. These wines are made with no concessions to modern methods; they are matured in barrels under a protective film of yeast (flor), which gives them the flavour of walnuts and almonds that is characteristic of fine sherries.
