both refined and rich. The extremely well-balanced first nose is characterized by notes of ripe fruit (pineapple, plum), heady florals (iris, hyacinth), honey, cinnamon and dried fruit. Allowed to breathe, it becomes praline and almost chocolatey. The rum’s influence is tangible (cane sugar). The exotic dimension has become more pronounced (mango, persimmon). In the background, malted barley, citrus fruit (lemon, grapefruit) and a hint of clove complete this complex and dense aromatic picture.
clean, full of energy. The very expressive attack sees spice bread, sugar candy and sugar cane leave a lasting impression on the palette of flavours. At once spicy (black pepper, ginger), floral (lavender) and honeyed (heather, pine tree), the mid-palate is extremely subtle. Next, with lots of zest, the end of the palate invites us to enjoy dark chocolate, dates and very ripe banana.
long, generous. The finish is very natural and, continuing on perfectly from the palate, sees successive layers of liquorice, walnut, candied fruit (apricot, pineapple), star anise and mango coulis poured across the palate. Next, notes of precious wood mixed with barley grain bring lots of nobility and finesse to the very end of the palate. The retro-nasal olfaction is malty and fruity (guava). The empty glass is then camphoric, herbaceous (dead leaves), spicy (saffron) and floral (iris butter).
