Tasting note

  • Appearance : cuivre orangé soutenu.
  • Nose : riche, puissant. Si la tourbe est d’une rare concentration, elle n’est à aucun moment pesante. Pour mieux illustrer cette prouesse, elle s’est enrichie de notes fruitées (orange sanguine), épicées (girofle), florales (jacinthe) et pimentées (Cayenne). À l’aération, le nez devient de plus en plus médicinal (baume, camphre) et animal (lard, poisson fumé).
  • Palate : pleine de vie, gourmande. Omniprésente en attaque, la tourbe est nettement épicée et médicinale. Le milieu de bouche voit surgir en force des fruits rouges (fraise, framboise) et noirs (cassis, mûre). Progressivement, des clous de girofle reviennent sur le devant de la scène. Ils sont enrobés de notes cacaotées et torréfiées (café). L’ensemble possède un charme indéfinissable et une grande sensualité.
  • Overall : longue, onctueuse. La tourbe n’a pas perdu une once de présence. Tour à tour chocolatée, réglissée, fruitée, florale, saline ou bien épicée, elle impose sa loi. Pour autant, elle fait preuve d’une élégance remarquable. Spirituelle (encens) et pralinée, la rétro-olfaction privilégie les fruits exotiques (passion, mangue) tandis que, du verre vide, monte une fumée épaisse ainsi que des notes de bacon.

“Best Single Malt in the World” This highly prized World Whiskies Awards title has been picked up twice (2002 and 2008) by a Yochi single malt. Such recognition was a shock for the Scottish distillers, and a revelation for many whisky fans. The Yoichi distillery, one kilometre from the Sea of Japan, produces a whisky with salty, slightly medicinal notes, not unlike its Scottish cousins from the Isle of Islay. Yoichi has its own cooperage, and takes particular care in the selection of its barrels, made on site from new oak, a practice that has become rare in Scotland. Find out more
