All about making whisky
Last release of the multi award winning Japanese distillery, this sherry Cask expression joins three other expressions in the Yamazaki Cask 2016 Collection - the Bourbon Barrel, Mizunara & Puncheon. Matured in ex-Oloroso, its casks have been hand selected by Shinji Fukuyo, the Chief Blender at Suntory; there will be just 5,000 bottles worldwide.
Le maître assembleur Shinji Fukuyo est souvent comparé à un artiste. Ses assemblages sont des créations méticuleusement réalisées à partir de plus d’une centaine de whiskies de malt.
After nearly a century, Yakima perfectly illustrates the integration of whisky into Japanese culture. For its production, Yamazaki uses six types of malted barley with various levels of peat, all from Scotland. It is during the fermentation process that Yamazaki begins to acquire some of its Japanese character. The 10, 12 and 18 year-old releases all have a rich, refined, elegant profile, characterised by the absence of malted notes. With age the initial fruity, vanilla notes are joined by dried fruit, chocolate and oak, all the while continuing to offer tremendous freshness. Find out more
