All about making whisky
The Valdespino El Candado wine is made at 100% of Pedro Ximenez raisins. The grapes are sun-dried during two weeks after harvesting, (a process called “soleo”) in order to concentrate the sugar content, turning grapes into raisins. The wine is aged for 10 to 12 years in American oak casks .

Valdespino is one of the oldest bodegas in Jerez, dating back to 1264. It owns Clos de Macharnudo, the finest terroir in the appellation. From the poor, chalky soil, known as alabriza, it produces its Fino, Inocente, and its best Amontillados. These wines are made with no concessions to modern methods; they are matured in barrels under a protective film of yeast (flor), which gives them the flavour of walnuts and almonds that is characteristic of fine sherries.
