Tasting note

  • Appearance : rubis.
  • Nose : fin, mûr. Des notes de cerise burlat, de fraise des bois et de rose de Damas donnent une idée de la finesse du premier nez. A l’aération, il devient floral (oeillet) et ses fruits deviennent confits (pêche, datte). Puis, son caractère épicé (poivre, cannelle, girofle) se met en place, ce qui procure beaucoup d’allant à la palette aromatique.
  • Palate : vive, nette. Ses tannins sont fins et veloutés. Des fruits rouges (fraise, framboise, groseille) prennent progressivement possession du palais. Leur concentration est telle qu’ils se transforment en confiture en milieu de bouche. Par ailleurs, elle devient de plus en plus florale (violette). Elle se prolonge sur le tabac frais et les amandes légèrement grillées.
  • Overall : longue, délicate. Les épices refont leur apparition. Elles ont gagné en puissance. De leur côté, les fruits rouges sont devenus noirs (myrtille, mûre, cassis). A vrai dire, la finale ne cesse de gagner en ampleur et en richesse. La rétro-olfaction est minérale et exprime avec enthousiasme la jeunesse de ce vin promis à un bel avenir. Le verre vide est finement boisé et torréfié.

Having developed in the boom years after the Second World War, conventional agriculture is based on notions of yield. Largely applied in the world of wine-growing, this approach began to be challenged in the early 1990s. Leading the revolt were a handful of grape growers and wine producers who denounced the over-use of pesticides, fungicides and yeasts that have been cultured in laboratories. This trend of moving towards natural methods, that the main wine producers are now also trying to develop, has resulted in the creation of many types of certification; among the strictest is Demeter; there are also various groups and associations in France and across the Alps such as Renaissance AOC and Triple A.
