All about making whisky
The first and only sake in the world created using seawater. Unfiltered and undiluted, it has maintained all of its salty aromas through the long maturation process. Produced from certified organic rice, milled to only 15%, unpasteurised and aged for 10 years. This sake was produced at the Uehara Shuzo brewery founded in 1862, using traditional sake brewing and production methods. Golden yellow colour. The initial nose evokes an old sweet white wine. It develops with fine woody notes, candied citrus fruit (lemon) and acacia honey. Marron glacé and vanilla emphasize its oxidative, mature character. The palate is supported by a very pleasant, fruity acidity (plum, grape). The mid-palate is herbaceous and lush (lime blossom, vervain, sage). Gradually, rice leaves a praline signature. New dried fruits (fig, date) make for a very creamy nose. The empty glass invites us to savour caramel sweets and succulent golden brioche.
