Highly allegorical, this version distilled in 2000 uses a language rich in imagery to develop its aromatic and flavour palette. Whether it is odours of rope, coppery, mineral or earthy flavours, or an unexpected hail storm that come crashing onto the palate, each image inevitably takes us back to the glass windows of the Caol Ila distillery not far from Port Askaig.

Profile: firm, intense smoke forming a screen behind which malted barley can be glimpsed. Upon airing, it becomes earthy, herbaceous and fruity (peaches). Note of smoked fish. Sharp, the attack on the palate is smoky, maritime, mineral, earthy, spicy and medicinal. It lingers with notes of fresh fruit and chocolate, transporting us to the Caol Ila distillery.

Tasting note

  • Appearance : vibrant gold.
  • Nose : firm, powerful. At first, there is a screen of intense smoke, behind which we catch glimpses of malted barley. The latter is milky and saline. On aeration, the nose gains more consistency, becoming earthy, herbaceous (damp straw), and fruity (plum, peach, pear). Gradually, its marine character becomes more apparent, with smoked fish, wet rope and iodine tincture.
  • Palate : lively, sharp. The attack on the palate gets straight to the point, confidently deploying smoky, marine, mineral, earthy, spicy and medicinal notes. The mid-palate offers a moment of tranquility, revelling in fresh fruit, vanilla and chocolate. The back palate takes up its pilgrim’s staff and sets off for Port Askaig.
  • Overall : long, dense. Black pepper, seaweed, thick smoke, camphor, liquorice, salt and a peat rich in mineral salts take us in full sail to Caol Ila, with coppery tones reminiscent of the distillery’s huge stills. Briefly, the palate is engulfed in a hail storm. The retro-nasal olfaction is wonderfully mineral, while the empty glass is peaty, malty, liquoricey and medicinal.

A wine merchant recently founded by the Singh brothers, the owners of The Whisky Exchange in the United Kingdom, Speciality Drinks offers three ranges of very different single malts. The first, Port Askaig, is composed of four bottlings of an Islay single malt, including an expression with no age statement and a 30 year old! The second, Elements of Islay, celebrates the different distilleries on the island, each easily identified by their initials. The third, simply dubbed Speciality Drinks, offers a wide selection of single malts from Scottish distilleries.
