Tasting note

  • Appearance : incolore.
  • Nose : dense, profond. Particulièrement fermentaire (bouillie, fond d’artichaut), le premier nez fait également preuve de beaucoup d’exotisme (ananas rôti, mangue, banane plantain). Floral (iris, rose poivrée), il se prolonge sur des notes balsamiques (thuya, cèdre), médicinales (baume, onguent) et sur de nouvelles fleurs encore plus capiteuses (tubéreuse, lys, lilas mauve).
  • Palate : gourmande, onctueuse. Elle nous invite à croquer à pleines dents du chocolat noir, du bâton de réglisse, des noix grillées ainsi que des amandes pilées. Le milieu de bouche se montre quant à lui salin et herbacé (cresson, mâche). Elle dévoile au fur et à mesure des notes pâtissières de frangipane et des agrumes confits (citron, pamplemousse)
  • Overall : longue, complexe. Tout d’abord, elle restitue dans les moindres détails des framboises et des fraises des bois. Fondante, elle répand sur les papilles du miel d’acacia et du coulis d’abricot. En toute fin de bouche, le seigle reprend droit de cité, son amertume réglissée lui procure beaucoup d’allonge. La rétro olfaction oscille entre le melon jaune et les épices (coriandre) tandis que le verre vide se montre duveteux à souhait.

Having discovered a recipe in a 19th century text, Boris Rodionov, a vodka expert, academic and writer, has endeavoured since 2010 to reintroduce ‘Polugar’, a forgotten category of vodka. Deeply rooted in Russian culture, this traditional vodka was distilled domestically and consumed by moujiks (serfs) all over the country; produced by a single distillation in a copper still, it disappeared when the Russian Empire introduced a monopoly on vodka production in 1895. Boris Rodionov and his son Alexey have created a modern version of this rye-based spirit, also known as ‘bread wine’, using authentic production methods and traditional recipes.
