Tasting note

  • Appearance : incolore.
  • Nose : dense, vibrant. Des miels forts et des épices tout aussi puissantes rivalisent d’intensité. Les premiers sont tapis dans le fond de la palette aromatique tandis que les secondes évoluent en surface. A mi-chemin, elles trouvent un terrain d’entente herbacé (foin coupé), réglissé et mentholé. Du côté des épices on trouve notamment du clou de girofle, de la noix muscade et de la coriandre. Pour ce qui est des miels, la parole est à la bruyère, au sapin et au tilleul.
  • Palate : élégante, nuancée. Avec une incroyable douceur, un flot ininterrompu de grains de poivre vert roule littéralement sur le palais. Il charrie avec lui du safran, du cumin et des baies de genièvre. Adouci par du miel d’acacia, le milieu de bouche est résolument floral (pivoine, rose) et exotique (litchi, kaki). A ce stade, miels et épices jouent toujours d’égal à égal.
  • Overall : longue, duveteuse. Spirituelle (encens, cire), son registre fruité s’enrichit de pêches blanches, d’abricots et de brugnons. Pour ce qui est des miels et des épices, leur osmose est à ce point parfaite, qu’ils ont donné naissance à des notes florales d’une très grande subtilité (ronce à mûre, géranium).

Having discovered a recipe in a 19th century text, Boris Rodionov, a vodka expert, academic and writer, has endeavoured since 2010 to reintroduce ‘Polugar’, a forgotten category of vodka. Deeply rooted in Russian culture, this traditional vodka was distilled domestically and consumed by moujiks (serfs) all over the country; produced by a single distillation in a copper still, it disappeared when the Russian Empire introduced a monopoly on vodka production in 1895. Boris Rodionov and his son Alexey have created a modern version of this rye-based spirit, also known as ‘bread wine’, using authentic production methods and traditional recipes.
