All about making whisky
The fruit of a collaboration between two houses – the Spanish wine merchants Equipo Navazos who specialise in sherry, and Niepoort, producers of port in Portugal – Navazos Niepoort 2009 is a white wine vinified according to the criteria of the best 18th century wine-makers from the Jerez region. Made from Palomino grape must, which is harvested in the best Albariza vineyards, the wine is fermented in barrels with natural yeasts and matured for nearly ten months under a layer of flor; no alcohol is added to this wine. It should be served like a white wine at around seven to nine degrees centigrade, and goes well with hors d’oeuvres, seafood and light dishes made with rice, pasta and cheese.
