The result of macerating Saintonge-grown ‘Noir de Bourgogne’ blackcurrants in a neutral spirit, this infusion is an ode to the almost sweet quality of the variety’s aromatic palette, highly reminiscent of a blackcurrant jam. On a gustatory level, however, the tables are soon turned, as the infusion turns drier, its full acidity given free rein to highlight the beautifully floral and herbaceous qualities of the blackcurrant. Far from hampering the overall balance, this dichotomy is instead a source of gustatory and olfactory delights.

Magnificent crimson-purple shade with violet glints. Exquisitely pure notes of blackcurrant evoke a mouth-watering jam. Upon airing, it is reminiscent of a delicious blackcurrant tart fresh from the oven. Much drier and more acidic, the attack on the palate sees the blackcurrant take on a much more floral (lilac, peony) and herbaceous (blackcurrant branch) aspect. The mid-palate is just as evocative, offering up the fruit itself. Silky, vinous tannins gradually submerge the taste buds. The retro-nasal olfaction is floral (rose petal) and fruity (blackberry bramble). Figs and dried walnuts surge out from within the empty glass.

Wine-growers in the French region of Saintonge for over two centuries, the Merlet family installed its first still in around 1850 in order to begin distilling and producing cognac. Over generations, they have refined their craft and now produce unique eaux de vie that are characteristic of the Saintonge terroir. Everything, from the alchemy of the still’s copper to the oak of the barrels, comes together over time to allow their eaux de vie to blossom into harmonious cognacs. In the 1970s, the creation of the Cassis plantation represented the first step in the diversification of the local wine-making terroir. The birth of the Crème de Cassis of Saintonge Boisée led to the creation of a range of fruit crèmes that are today extremely well-known.
