Tasting note

  • Appearance : acajou à reflets verdâtres.
  • Nose : ample, ferme. Des épices (cumin, gingembre râpé), des fruits exotiques (mangue, passion, kaki) et des graines de moutarde transcendent son caractère oxydatif pour mieux mettre en valeur l’influence d’un xérès de toute beauté. Il évolue sur la réglisse noire et sur des notes animales (bacon). Progressivement, une fine pellicule de suie se répand sur la palette aromatique d’où émergent des oranges sanguines et des figues fraîches.
  • Palate : acérée, puissante. Elle reprend à son compte le caractère cendré et boucané du nez (lard fumé, cuir). En milieu de bouche, des fèves de cacao, des citrons verts et des grenades forment un triptyque inattendu et original. Médicinale et mentholée, elle dispense au fil du temps des baumes et des onguents salvateurs. Gourmande, elle nous fait également savourer de savoureuses confitures de rhubarbe et de cassis légèrement brûlées.
  • Overall : longue, concentrée. Sa trame serrée procure la sensation de marcher sur un sol granitique. Une tourbe saline, réglissée et chocolatée prend peu à peu possession du palais. Dotée d’une belle amertume, elle est ensuite rafraîchie par le jus de quelques oranges sucrées. Elle se prolonge sur le foin coupé, les beignets de tomates vertes et les plantes aromatiques (verveine, estragon).

The Karuizawa distillery was built in 1955 in the town of the same name, in the prefecture of Nagano surrounded by the Japanese Alps. Japanese whisky generally has a very good reputation, but Karuizawa is especially sought after and appreciated by connoisseurs; it has accumulated an impressive number of medals in competitions. Just like Macallan, it is a whisky that owes much of its character to the type of barley that is used: (‘Golden Promise’) and to ageing in sherry casks. Production stopped in 2000 and bottles are becoming increasingly rare.

Merchant

A small company founded in 2006 by David Croll and Marcin Miller, Number One Drinks specialises in the selection, export and distribution of the most exclusive Japanese whiskies. Working in partnership with Ichiro Akuto, the owner of the Chichibu distillery, Number One Drinks sells the latter’s various single malts – Chichibu and Hanyu – in Europe, along with blends and the latest casks from the closed Kawasaki and Karuizawa distilleries, which were purchased in 2011. No other company offers such a wide range of exceptional whiskies, from the youngest, produced by newly created distilleries, to the oldest, often from distilleries that have long since disappeared.
