Tasting note

  • Appearance : jaune doré à reflets ambrés.
  • Nose : ample, équilibré. Le premier nez révèle une fine note de fumée et de bois précieux (chêne). A l’aération, il évolue avec douceur sur le sucre candy et sur la réglisse. Dans un second temps, la fumée se fait plus présente, son âcreté vivifiante est progressivement enrichie de notes fruitées (pomme, poire). Plus tard, des notes de sous-bois (champignons, marron) témoignent de sa maturité.
  • Palate : à la fois ferme et onctueuse. Exotique (banane, ananas), son attaque est également marquée par le cuir et les épices douces (cannelle, cardamome). Minéral, le milieu de bouche donne la parole à la fumée et procure la sensation de se trouver devant l’âtre de la cheminée. La fin de bouche est dédiée aux fruits frais (pêche, reine-claude, mirabelle) et aux fleurs capiteuses (lys, iris).
  • Overall : longue, concentrée. Elle prolonge longtemps la bouche. La fumée est toujours au centre des débats. Orientale, elle évolue sur les épices (curry, poivre rose). Le parfum capiteux de la fleur de sureau envahit peu à peu l’atmosphère. La rétro-olfaction est herbacée (foin coupé) et végétale (laurier, sauge). Le verre vide est à la fois fruité, fumé et épicé.
