Tasting notes
Nose : rich, powerful. The initial nose reveals a backbone of delicately smoked bacon. This slightly animal character is so typical of Hanyu that it almost brings a tear to the eye. Old rose, dried apricot, heather honey and ginger give it huge amounts of class and precision. The nose is quite simply delicious. It is full of depth and constantly gains firmness and complexity.
Palate : clear, uncompromising. Velvety tannins take hold of the palate. They then open up to allow the expression of their floral (violet, lavender) and mineral (slate, manganese) character. The meaty notes on the nose have given way to black fruit (blackberry, cherry) and orris butter. Its magnificent woodiness then dissolves into a fine apricot and honey powder. Time brings spices (cardamom, cloves, nutmeg) that integrate wonderfully into the flavour palette.
Overall : long, voluptuous. The woody, spicy, floral and fruity flavours have such concentration that they almost become solid. A fruit jelly of green tomatoes, passion fruit and mango plunges us into a world of fine confectionery. The retronasal olfaction offers outstanding suppleness and firmness. Like the nose, the empty glass is animal, herbaceous and spicy (ginger, nutmeg).
