Bill Lark created his distillery 153 years after the town of Hobart in Tasmania closed the doors on the last of its distilleries. From its peat bogs to its extremely pure water – perfect conditions on all fronts to produce a superb whisky. The idea for the distillery first came to Bill Lark at the end of a particularly successful trout fishing trip. His daughter Kristy has now taken over from him at the head of the distillery and a 1,800 litre capacity wash still and a 500 litre spirit still have been installed. One of its single casks (LD39) has just been chosen as the best Australian whisky.
