All about making whisky
The stills used by the estates, which are part of the Clos Martin range, are small and allow a large amount of heavy congeners to be retained in the heart of the run. This results in a distillate with a low alcohol content of 52% and twice as many aromatic congeners than would be found at 60%. This means that Clos Martin Armagnacs always have a rich, earthy character which is also subtle and powerful. Obtaining a balanced eau de vie at such low alcohol levels requires a huge amount of experience. These various eaux de vie are then aged separately in order to create different bottlings based on their vintage, terroir and grape variety.
