Tasting note

  • Appearance : bright gold with hints of green.
  • Nose : both rich and round. Ripe fruit (yellow melon, plum) provide a particularly gourmet and juicy introduction. Rapidly, peat decides to make an appearance. It has a slightly spicy (fresh ginger) and animal (leather) character. Aquatic, it develops into water lily and watercress.
  • Palate : firm, clear. Different to the nose, its field of action is incredibly long. Ripe fruit form the backbone here for peat, spices and heady flowers (broom, lily). The mid palate is sprinkled with numerous aromatic plants (lime tree, vervain, rosemary). Becomes increasingly medicinal (ointment) and spiritual (incense).
  • Overall : long, powdery. Its sandy texture conjures up images of an arid landscape illuminated by the sunlight. An oasis of citrus fruit (lemon), white flowers (lily, arum) and rosemary provides a refreshing end to this finish. The retro-olfaction is characterised by tobacco and exotic fruits (pineapple), and the empty glass reveals straw, curry and walnut.

As well as reflecting its smoky, malted barley, Caol Ila is also oily and peaty, with marine and vegetable notes. Its recent official bottlings, which are particularly expressive, have an intense smoky and peaty character with a good balance of saltiness and sweetness. Superb versions of this single malt have also been released by independent bottlers Gordon MacPhail & Signatory Vintage. Caol Ila’s stills, which are large and onion-shaped, have a strong influence on this single malt and give it a fairly light and delicate character. Find out more


Although the independent bottler Signatory Vintage cannot claim to be one of the oldest in Scotland, it has managed to build up an extremely solid reputation amongst the great malt connoisseurs. The creator of the famous range The Prestonfield and many other well-known ranges, it is best known for its un-chillfiltered and cask strength bottlings that offer amateurs the chance to enjoy their whisky in its most natural form. It was also one of the first independent bottlers to acquire a distillery and now offers a growing number of expressions of one of the most artisan single malts available.

The Cask Strength Collection of single malt and single grain whiskies is without doubt one of the most appreciated ranges. Each release is bottled undiluted, unchillfiltered and usually consists of a single cask. To help the consumer appreciate their whisky at more than a purely aromatic and gustatory level, Signatory Vintage takes care to display on each label, with great precision, the region of production, the date of distillation and bottling, the type of cask used, its number and the number of bottles of the same nectar that were produced. This range thus offers some fascinating facts, in addition to exceptional quality!
