Eau-de-Vie de Cidre
Apple brandy is distilled from a base of cider, in the same way as calvados, but because it is not produced in the same region as the latter, it cannot claim to be called calvados. Produced mainly in Canada and the United States (where it often known as applejack) this spirit often has a rather rustic character, but thanks to the meticulous work of small-scale distilleries such as Clear Creek in Oregon, it is becoming increasingly popular. Bottled at around 40%, this spirit has a rustic charm that makes its suitable for numerous cocktails and culinary applications.
