All about making whisky
A particularly complex and refined Bunnahabhain, one of the most delicately aromatic ones that we have bottled. A nice example of a subtle finish in a type of cask which sometimes can be overpowering, but as usual the trick lies in moderation.
The nose is gentle and flowery, with no obvious sherry influence: ripe pears, apples, aniseed. On the palate it’s firm, mineral, with notes of candied orange rind and again aniseed. The tannins from the oak are gentle, well tamed by honeyed and flowery notes (camomile). It’s not a weak mouthfeel at all, but it’s caressing. Towards the end a peppery note starts to build up, and it lingers for a while on the tongue for a warm and tingling finale.

Built in 1881 in the midst of the Scottish “whisky boom”, Bunnahabhain is located on the north-east of the Isle of Islay. The stillhouse houses two magnificent pear-shaped stills that produce a heavy spirit that generally has low levels of peat. Owned by the Burn Stewart Distillers group since May 2003, Bunnahabhain recently began releasing extremely peaty and smoky young whiskies through independent bottlers.
At the head of this independent merchant, Fabio Rossi continues the long tradition of Italian whisky bottling. His bottlings mainly concern malt whiskies from the isle of Islay, and are characterised by their sherry cask finishings.
The casks that produce the whiskies in the Barrel Selection are personally selected by Fabio Rossi, director of the independent bottlers, Wilson & Morgan. Bottled without chill filtering or the addition of caramel, the whiskies in this range are often lighter, purer in flavour and more ‘honest’ than some industrial whiskies.
